I think it's great that we can have a thread for any mod-niche. So let's get the UI section going.
My favourites so far:
UI

Morrowind UI Revamped:
New interpretation of the UI that keeps vanilla friendly. Looks gorgeous in 1080p. I've used both the classic and the dark theme.
Modern User Interface:
An alternetive to Morrowind UI Revamped, I prefer the Revamped more. I still get the smaller crosshair from this mod (seperate download), looks better than the vanilla one or the Revamped one imo.
Better Dialogue Font:
Fixes the blurry font that gives me headaches.

Loading Screens & Backgrounds
Morrowloading:
I always liked the Oblivion loading screen with a picture and some caption. I'd recommend to delete all the vanilla loading screens as they don't mix well. Widescreen friendly and in a high resolution!
Skyrim Style Splash Screens:
Not my cup of tea but an alternative to the Morrowloading screens. Widescreen friendly!
2015 Main Menu Background Replacers:
Two lovely main menu screens. I'd recommend the Menu Intro Animation Remover too, looks weird on start-up otherwise.

Prince of Moonshadow - Azura Creature and Cinematic Replacer:
I would not recommend this Azura replacer as it depends on Robert's bodies, these are not working well with most armor/clothing mods as those mods only support vanilla or Better Bodies. The video however is well made. The entire package is bloated cause the 4:3/16:10 have an inflated encode. The 16:9 version is only 90MB.
720p MCP fix is needed.
HD Intro Cinematic - English:
Remake of the intro cinematic in higher quality.
MCP fix is also needed.

I recommend the MCP Better Typografie Fix if you're playing on a higher resolution (720p+). Makes the journal/book pages much more readable.
